Golden Banana Rolls
Ingredients
6 pcs bananas (cooking or plantain bananas), peeled and each sliced lengthwise into 4 pcs

12 pcs Lumpia wrappers (egg rolls), each cut into 2 pcs
1 cup brown sugar
1 cup water
2 pcs Pandan leaves (screw pine)
(234 g) fresh cut pineapple chunks
4 Tbsp margarine
Directions
1. Wrap each banana slice with Lumpia wrapper. Fry in hot oil until golden brown.
Drain and set aside.
2. Combine sugar, water and Pandan leaves.
3. Mix well.
4. Cook for 20 minutes.
5. Add fresh Cut pineapple chunks and simmer until thick.
6. Add margarine
7. Pour over fried banana rolls just before serving.
Banana Fritters
Ingredients
-Peeled bananas, sliced length ways in half, then sliced in half across the middle.
-1 medium egg - yolk and white separated.-¾ cup of water.
-2 ounces of flour.
-1 tablespoon of olive oil.
-Cinnamon.
-Pinch of salt.
-Olive oil, for frying.
-Icing sugar
Directions
1. Sieve the flour and a pinch of salt into a large bowl and make a well in the center.
2. Add the egg yolk, water and oil. Mix to create a batter.
3. Beat the batter until it is light; stand in a cool place for 45 minutes.
4. Beat the egg white thoroughly to create peeks, add to the batter by gently cutting it into the batter until it is completely mixed.
5. Drop each piece of banana into the batter then add to the hot olive oil, sprinkle with cinnamon and fry until lightly browned.
6. Remove onto paper towel or a strainer to allow the extra oil to drain off.
7. Allow to cool 5 minutes then sprinkle with icing sugar.
Serve immediately.

Healthy Tips
Just melt dark chocolate in a bowl over a slow flame. (Use a deep pot, add water, set the bowl with the chocolate into the pot. Do not allow the bowl to touch the water. Simmer slowly until the chocolate is melted to your desire)
Banana Boats
Ingredients
1 x Banana.
Raisins.
Dark Chocolate chips (for their antioxidant properties)
Honey
Directions
1. Partially peel the banana.
2. Cut a wedge-shaped section in the side of the banana and remove wedge.
3. In the space add raisins, dark chocolate chips and honey
4. Cover banana with banana peel and wrap in tightly in foil.
5. Place in coals (or a warm oven or grill) for about 5 minutes or until chocolate is melted.
6. Sprinkle with nuts for an added health benefit.

Blueberry Cranberry Banana Bread
Ingredients
2 tsp baking powder
1/2 tsp baking soda
125 g melted butter
150 g brown sugar
2 eggs
1 tsp vanilla extract
4 large ripe bananas (they should be a little brown - not green)
1/2 cup pureed cauliflower (extra health kick and will not be tasted in the final product)
1/2 cup blueberries and cranberries
Directions
1.Preheat oven to 325 F.
2. Grease Loaf tin or cupcake tin
3. In a large bowl mix flour, kbaking powder and baking soda.
4. In another bowl mix together melted butter and sugar until well blended.
5. Add eggs and vanilla, then mashed bananas and pureed cauliflower. Mix well.
6. If using raisins or walnuts add them in at this and mix.
7. Gradually add the flour mixture stirring well after each addition.
8. Add blueberries and cranberries and mix gently to distribute the berries.
9. Add batter to loaf tin or cupcake tin. Make sure the batter is distributed evenly in the pan. You can do this by gently tapping the pan in the counter a couple of times.
10. Bake for 1-1/4 hours until golden and springy to the touch. Insert a toothpick in the center of the loaf to ensure the loaf is cooked through. The toothpick should come out clean if it's done.
11. Leave in the tin on a wire rack to cool before removing from tin.
*Store in an air tight container for up to 3 days in the fridge.
