PITA CRISPS RECIPE

Pita crisps is great for dipping. In this day and age where a high percentage of the population is over weight, including kids, pitta crisps is a healthy alternative to potato chips, and preferred by most kids and adults.

Ingredients
  • 2 pitta breads
  • 1 Tbls olive oil
  • 1/2 tsp mixed herbs (optional)

Preparation
  1. Preheat oven to 180C/350F/gas mark 3
  2. Split the pita breads in half and cut each piece in wedges.
  3. Brush each with a bit of olive oil and sprinkle on mixed herbs.
  4. Place the on a baking tray in a single layer
  5. Bake for 10 minutes until golden and crisp
Note: They can easily over cook so check on them often.

Dip away with hummus, raita, or any healthy dip of your choice. Also great for children and adult parties. You can also jazz them up with a variety of flavors such as BBQ or Parmesan cheese.

"LITTLE ONES" LEMON MUFFIN RECIPE


These muffins are made with Greek Style Yogurt for an extra healthy kick and cauliflower so little ones can have a yummy snack and get vegetable nutrients- All at the same time! You nor your little ones will see or taste the cauliflower but instead a beautiful, moist, heavenly muffin.






Ingredients
  • 1/2 cup / 125 g Greek Style Yogurt
  • 1 cups sugar
  • 2 eggs
  • 1/2 cup pureed cauliflower
  • Grated zest of 1 lemon
  • 1 1/2 cup flour
  • 1-1/2 teaspoons baking powder
  • A quarter of a 1/2 cup melted butter (use a healthy butter)
Directions

1. Heat the oven to 350ºF/180ºC. Beat the yogurt and the sugar together in a bowl. Beat in the eggs, cauliflower and lemon zest. Sift the flour with the baking powder and beat in. Finally, add the melted butter  and beat the whole mixture well. Pour into non-stick muffin tins or a greased and floured loaf pan. Bake until a toothpick comes out clean, approx. 25 minutes.

Note: recipe makes 12 muffin-sized cakes, or 1 loaf.
