Carob Chip Cookies

Here is another delicious healthy snack recipe using carob chips in place of chocolate chips, from Isabel De Los Rios. This time she shows us how we can have a yummy treat with a healthy kick, that is also calorie conscious. Notice some of the ingredients, and how they differ from what is in an average chocolate cookie recipe. Don't let this turn you off - try them!

Carob Chip Cookies

Ingredients

-1/3 cup of walnut oil
-1/2 cup of pure maple syrup
-1 teaspoon vanilla extract
-1 organic egg
-¾ cup of brown rice flour
-1 teaspoon baking soda
-1/2 cup of carob chips unsweetened
-Dash of all-spice optional

Directions

1. Grease two baking sheets and preheat oven to 375° F.
2. In a medium size bowl, combine the oil, maple syrup, and vanilla.
3. Beat the egg and stir into the oil mixture.
4. Gradually stir in flour and baking soda to form a stiff batter.
5. Fold in carob chips and drop the batter into the baking sheets by teaspoons.
6. Bake for 10-15 minutes until cookies are lightly brown. Remove from the oven and cool.

Serve with almond milk or rice milk.

This is a wonderful recipe for a children's party as well, showing kids they can eat healthy with delicious tasting treats.
