Clay pot cooking requires a higher temperature, usually about 50 degrees C (90F) higher and 15-20 minutes extra cooking time. This is because heat is lost due to the evaporation of water.

Care and Usage of Terra Cotta Pots
  • Always soak the pot for 15 minutes before use. You can also rub garlic on the unglazed bottom of the pot.
  • Clay pots should never be placed in a pre-heated oven - they will crack. Instead, put the pot in the oven first then set your oven to the desired temperature. When you are ready to add the food to the pot, remove it from the oven, place the food inside and place it back in the oven for the desired time.
  • Place your clay pot on a cooking pad or towel when you remove it from the oven. Do not place it on a cold surface so as to avoid a sudden change in temperature which will cause cracking to the pot.
  • To clean clay pots after cooking simply remove the food, let the pot cool then soak in water for a few minutes. Sprinkle with salt and scrub.
  • To avoid risks like lead in the glaze or shoddy workmanship always choose clay/ceramic/terra cotta pots from a reputable manufacturer or a well-known potter.

Lemon Pepper Chicken with Turkey Sausage

I love this dish because it is fast and easy to prepare and only takes 30 minutes to cook. It also tastes great! Although you do have to turn and baste in the last 15 minutes, it's worth if for a tasty, low calorie, healthy meal. You can adjust the heat of the pepper by adding or taking away from the measurement as you prefer.

Lemon adds a lovely flavor but also helps kids get their vegetables down, as most kids like the taste of lemon. Another idea to help your kids eat their vegetables is to sprinkle a tad bit of cinnamon with a touch of butter. If you child is on a diet, omit the butter but keep the cinnamon and be sure to add while the vegetables are still hot.

Ingredients
- 4 chicken legs
- 2 Italian turkey sausage
- 1 teaspoon of crushed red pepper
- 3 garlic crushed
- 3 tbls extra virgin olive oil
- Sea salt, black pepper to taste
- 2 lemons squeezed
- 2 slices lemon for garnish

Directions

- Pre-heat oven to 350° Fahrenheit.
- Combine seasoning (red pepper, garlic, olive oil) in a bowl and whisk well.
- Put chicken and sausage on a flat roasting sheet and pour over half the seasoning mixture.
- Cook for 15 minutes and remove from oven.
- Pour over the remainder of the seasoning mixture and cook for a further 15 minutes.
- Mean while steam broccoli, and carrots adding olive oil and a sprinkle of sea salt prior to steaming. Steam for 20 minutes maximum.
- After 15 minutes remove chicken and sausage and sprinkle with remaining seasoning.
- Continue basting and turning for 15 minutes more and cooked through.
- Add steamed vegetables to the chicken and sausage pan in the last 10 minutes of cooking time.
- Remove from oven and sprinkle with lemon juice.
- Garnish with Lemon wedges
