These cranberry and maple syrup oatmeal cookies are soft and chewy, with touches of tartness to the pallet from the cranberries. You and your kids will love them just like we do!
Ingredients
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup unsalted butter. Room temperature
- 1 1/4 cup light brown sugar
- 1/4 cup maple syrup
- 1 tsp vanilla
- 2 eggs
- 3/4 cup dried cranberries
- 2 cups quick cooking oats
Directions
1. Pre-heat oven to 350F
2. In a medium bowl sift flour, soda, powder, cinnamon and salt together.
3. In an electric mixer cream butter and sugar. Mix in honey and vanilla until light and fluffy.
4. Add the eggs one at a time and mix until fully combined.
5. Fold in dried cranberries and oats.
6. Fold in dry sifted ingredients.
7. Use a tablespoon to scoop up dough and place on a buttered or oiled banking tray, about 2 inches apart.
8. Bake until golden - about 13-15 minutes.
9. Remove from oven and allow to cool for 5 minutes before moving to a cooling rack.
These are great eaten warm, cold or at room temperature and are freezable.
